I did something this morning that I haven't done for a very long time and on a whole new level at that. I made up a recipe. Big deal, right? Wrong... because usually it would be making up a casserole or maybe experimenting with a recipe I have to create something new, but this morning, I made Whole Wheat Lemon Poppy Seed Muffins using nothing but gut instinct for ingredients, oven temperature, and baking time.
I was really good about keeping my little secret this morning too. I wasn't about to tell my family this small tidbit of information before they started their breakfast. I didn't want it to influence their opinions about how it tasted, but I admit, I was really nervous they would turn out horrid!
Imagine my surprise then they looked gorgeous... and then again when my son asked for another one because "they are really good!" (he is not a muffin eater, but must have been hungry to be willing to try the first one).
So I get home from School drop off to finally have some breakfast and have a taste for myself and... Wow! These are amazing muffins! Some of the best I've made in years! Maybe ever!!
I just may have to reconsider my entire approach to cooking from now on.
